Dreams...

I just came back from an exciting trip back to my homeland - Peru.  The last time I was there it was 1999...yes, 11 years ago.  Many things have changed but as all things, some things never change...including the food, smells, sounds and tastes of Peru.  On my last stop before heading back we had a 'light dinner' at one of the best bakeries in Lima..San Antonio.  I still remember this place fondly.  Calling it just a bakery does not do it justice.  You can order fresh bread, sandwiches, deli meats, chocolates, truffles, drinks...you can take out, dine in.  I wished I had more time there!


While there, I had to visit the restroom - which oddly enough, was behind the counters...so when I came out my brother took this pic of me.  I didn't think much of it at the time, but once I got home and saw the pic, it got me thinking...seriously this time...about perhaps, just perhaps, I should think about this 'dream'.  What do you think!?  :)






While I dream, I am back to the busy-ness of being a full time mom.  For as much as I loved the 1 week vacation, I missed my family terribly.  It took me a while to get back to the routine but here I am, back.  It's going to be a busy couple of weeks, with my biggest challenge yet - doing a 4 tier wedding cake for a friend.  We'll see how it all goes, especially considering that this time I will have to transport it almost out of town!!!


And before and after that project I have a bunch of little projects...my dad's birthday, thanksgiving dinners, etc. etc.


I know I've been slacking on my posts recently, but as I travel and see new things I will definitely try to share some more with you all!

Back to the basics


Cake decorating has been keeping me extremely busy in April.  Thanks to all my fans, I have been creating edible art every week!  Here are some of my latest projects...


What I love about this experience is the fact that I keep on creating new things, learning new things and making people happy.  It is not always easy to figure out how to come up with a design, but I like the challenge.



However, just last night, as I was reading posts on cake decorating, I started asking my Father to give me the wisdom to continue to be in touch with Him...to always be mindful of having the right attitude and to use this gift in a way that is pleasing to Him before anything else.




To that end, I have decided to block a couple of weekends off in May.  Part of me doesn't want to but deep inside me I know what is right - if I want to continue blessing others with cake, I cannot get overtired.  And even beyond that...my family comes first before anything else.



Don't get me wrong - I'm loving cake decorating!  But sometimes when one is too excited one can overlook things - I don't want to.  And to me, it all boils down to purpose - what was the original purpose of God showing me and giving me this gift?  It was to discover that He is never completely done with us, that He has so much more for us, that He delights to see us happy, and that He wants me to share this gift with all of you.

Spring is in the air - now the family needs to get better soon

Spring is definitely in the air.  As I type this I see the sunshine come down on my patio set in my porch.  It's 10 degrees ... amazing...but I am stuck at home, sick, alongside with my daughter and soon my husband.  Samuel is all better now though.  It's been a tough week (seems longer!)...it was the same story last weekend - but back then it was Samuel who was sick.

Despite all these challenges, I am still making cakes...and have been testing new recipes!  Amazing when I think of it.  The combination of doing cakes and caring for a sick household has come with much stress, but also has helped me relax in a funny way.  One thing I notice though - I am not as creative or patient....and who would blame me!!!

What Have I done lately?  a 2 tier rose cake with white and carrot cake inside, cream cheese icing.  Tiramisu cupcakes to die for, Carrot cupcakes yummy and moist, and a strawberry shortcake I'm testing in the fridge (since ,ahem, I have so much time) :P  Enjoy the pics!

So this is for real...


What started with just an idea just a few couple of weeks ago is a real thing now.  Last night I finally sent out an official email to all my friends about Sandy's Sweets.  I still can't believe it.  And I got my fourth order, this time, not from the gal that has been supporting me all the way...and who has been ordering from me all December!

This, despite the short time I've been doing this, has been a great experience...from finding it rewarding to make yummy and delicious treats, to doing design of the logos and marketing material, to just simply being a way God has been showing me WHO I am...I Never really thought I was creative, or a good 'cook'...I knew I was a perfectionist, but not THAT much (I still hesitate to post on this blog because I feel I don't quite like everything in it in terms of the set up!).  God DOES lead in mysterious ways.  Whatever happens to Sandy's Sweets from hereon, I can say already that it's been a good...no, wait...a GREAT experience.

Anyways, back to reality.  Today is the first day we all in the Lam household try to get back to a routine.  Stephen is back to work, we are all back to waking up early, Samuel is back to nursery school, Sarah is back to spending mornings with me (not napping!), and I'm back to mothering 2 kiddies at home...life is good :)

I will continue to post my adventure with Sandy's Sweets in this blog despite my hesitation - as Stephen says, this blog idea suits me...I like to talk and share thoughts.... ^_^  Perhaps he is right!
